Shizi pancake is a local delicious snack food in the rural of Shaanxi. It is produced by baking the pancake on heated cobbles. Shizi pancake can be traced to the Stone Age. According to historical records, in ancient times, millet rice was put on burned stones which heated it to well-done. Shizi pancake has undergone a long history of transition and improvement. In the Tang Dynasty, the pancake was a tribute paid to the Emperor. In the Qing Dynasty, shizi pancake entered Nanjing and got to be called “the natural cake”.
